Dr. Peter Schropp is a senior expert at the Doemens Academy in Germany and a global authority on the sensory assessment of mineral and spring waters. At Doemens, he serves as the initiator and head of the international Water Sommelier training program, a curriculum he launched in 2011 to highlight the vast sensory diversity found in different mineral compositions. His work at the academy challenges the notion of water as a neutral substance, training professionals to discern its nuanced flavors and mouthfeel while advocating for its recognition as a complex food product.
Dr. Schropp holds a doctorate in food chemistry from the Technical University of Munich and has been responsible for food science, chemistry, and sensory quality assurance since joining Doemens in 1995. In addition to his academic leadership, he is the voluntary Managing Director of the Water Sommelier Union and a recognized juror for international mineral water awards. By combining his background in food chemistry with the culinary art of water tasting, he provides expert consultancy on food law and quality management to the global beverage industry.
