
Sensory Diversity of Mineral Water with guest speaker Dr. Peter Schropp
Dr. Peter Schropp is a senior expert at the Doemens Academy in Germany and a global authority on the sensory assessment of mineral and spring waters. At Doemens, he serves as the initiator and head of the international Water Sommelier training program, a curriculum he launched in 2011 to highlight the vast sensory diversity found in different mineral compositions. His work at the academy challenges the notion of water as a neutral substance, training professionals to discern its nuanced flavors and mouthfeel while advocating for its recognition as a complex food product.
Dr. Schropp holds a doctorate in food chemistry from the Technical University of Munich and has been responsible for food science, chemistry, and sensory quality assurance since joining Doemens in 1995. In addition to his academic leadership, he is the voluntary Managing Director of the Water Sommelier Union and a recognized juror for international mineral water awards. By combining his background in food chemistry with the culinary art of water tasting, he provides expert consultancy on food law and quality management to the global beverage industry. His research and training programs continue to shape the market for premium mineral waters by emphasizing the value of local water sources and sensory excellence.

BANA hosted a community call to recap the January 2024 Hot Springs Association Conference at Murrieta Hot Springs Resort to discuss learnings and insights. This call features many of our community members as we collectively explore everyone’s takeaways. In addition we discussed this year’s theme, The Nature of Therapeutic Mineral Water, exploring the many ways we come to understand natural mineral water as a distinct form of water.

Jeff Osborne, owner of the Jacumba Hot Springs Hotel shared his issues with state and local code enforcement agencies to get the swimming pools permitted at Jacumba Hot Springs Hotel. Upon purchase, the team inherited a pool with a bench around the perimeter that raised flags at inspection, and just before opening the city came in and wanted them to re-do the entire pool. WIth BANA's support through the Water Registry Certificate and a letter of support to the county, along with a lot of negotiating by Jeff, the Jacumba team prevailed. He will be reviewing his leanings from the process and showcasing the one-of-a-kind experience they have created at Jacumba Hot Springs Hotel.
